We ask for a deposit of 50% of the cost of the workshop
when you make your booking.
Payment can be by cheque or internet banking.
Bookings can also be made through this website, using the
SHOP NOW tab. This gives you the option to pay
your deposit by credit card.
Your deposit will be refunded in full if the workshop is cancelled.
It is really helpful to us if you can confirm your place on any
workshop that you book into at least 2 weeks before the workshop.
Workshops may be cancelled if numbers are insufficient, so this gives us time to consider and to notify everyone whether the
workshop will go ahead or not.
Tea and coffee is provided when you arrive, mid morning, lunchtime and
mid afternoon on all workshops.
Please bring your own lunch.

KOANGA GARDENS PIZZA OVEN
BUILD YOUR OWN PIZZA OVEN
Saturday 16th January 9—4
Wolfgang Hiepe $120
Wolf will show you how to build an earth oven using mainly clay and sand. You will learn everything you will need to know in one day. These ovens can cook bread, pizza, casseroles. This workshop will be held at the Whare at Kohatu Toa, behind the shop at Koanga Gardens.
BEE KEEPING

Daniel Tohill $100
Daniel has used natural bee keeping methods for nearly 30 years now. The workshop will look at conventional bee keeping methods as well as a simpler method called ‘Top Bar Bee Keeping’. Both methods will be looked at in a more ‘bee friendly’ way, exploring an approach which has lower impact, is lower cost, chemical free and smaller scale. Daniel will show you simple equipment that almost anyone can make at home, monthly management, hive situation, moving bees, obtaining bees, swarming, diseases, wintering and much more. He will open a hive and you can observe bees at work, find a Queen and test for disease and mite. Natural bee keeping is increasingly important at this time when bee populations are in decline.
SCYTHING

Wolfgang Hiepe $80
The scythe has the potential to replace your lawn mower and the brush cutter. No noise, no vibrations, no fumes. Wolfgang has been scything for years and offers this workshop as a complete introduction to scything. He will demonstrate and teach techniques for grass cutting, lawn mowing, orchard work and kikuyu harvesting as well as scythe maintenance.
TOWARDS RENEWABLE ENERGY

Sabine Drueckler and Wolfgang Hiepe $90
Design your life to use more renewable energy, and get away with using less. This workshop will explore the philosophical and ecological ideas which make us change the way we live. Looks at how much electricity you really need. How can you reduce your consumption? Explore what is available in the alternative energy sector, see what Sabine and Wolf have done, and make plans for what you can do at your place.
ORCHARD DESIGN

Daniel will cover the basics of orchard design from a Permaculture perspective, looking at both deciduous and subtropical orchards. It is important to consider shelter, water, access, ground covers, nutrient management, pest control and which plants prefer which conditions. Learn how to get the best from your property. Daniel has had many years experience in designing landscapes and houses using the Permaculture method. Orchards are an integral part of this whole system. Many imaginative combinations can be explored. Come along and explore your orchard’s potential.
HOW TO GROW NUTRIENT DENSE FOOD

Kay Baxter $120
For our food plants to fully nourish us they must be grown in highly mineralised soils, with the right minerals available in the right ratios. This workshop will show you how to take care of your soil so that you will be able to grow nutrient dense vegetables, fruit, and all other produce on your land.
We will cover many ways of achieving this using both bought and local inputs.
Kay believes this is one of the most critical areas of learning for us all at this point in time. Our research and learning is based on the wonderful work of Dr Carey Reams, Dr Arden Anderson, and Dr A F Beddoe, as well as Grant Paton. All of these men are scientists whose amazing work Kay is studying so that it can be put into home gardeners language and practice, and be more accessible for all of us.
You will gain a clear understanding of how to grow nutrient dense food as the best basis for a healthy body.
This workshop will be pitched to people who already have basic gardening
knowledge and experience and will cover:
• Basic understandings of the Laws of Nature as they apply to soils and growing food.
• What minerals and other things our soil needs to grow high Brix plants.
• How to use a refractometer to measure the Brix (nutrient density) of your plants,
where to source what you might need, from both commercial and local home made sources.
• How to apply minerals.
• How to make Biochar, crush and burn bones for their use as soil amendments.
• How to make and use foliar sprays and compost teas, and more.

Wolf will take you through the process of making a range of traditional organic sausages and small goods, using a variety of meats, herbs and spices with low-tech equipment.

PERMACULTURE DESIGN BASICS: PART ONE

This course is an introduction to the concept of Permaculture.
Permaculture is: ' A land use system that looks at functional diverse plant and animal communities which enhances a sites ecological condition, soil fertility and natural productivity.’
The ethic of Permaculture is 'Care for the earth - Care for the people - Limit consumption, share the surplus'.
The second part will be on May 8th and it would be most beneficial to participants to commit to both days. An excellent first step for those who are perhaps interested to know the basics and how to put them into practise at your place, or for anyone considering some of the longer courses on offer and wanting to get a basic understanding.
Permaculture ideas can be used in many different situations, from a lifestyle block to a small urban garden.

Sabine and Romi will cover the basics of stock/broth preparation, fermented foods, how to make seeds and grains more digestible and nutritious, yoghurt making, sourdough and sprouting. The principles of the Weston A. Price Fountation will be covered and a delicious lunch will be served. The venue is Sabine and Wolfgang's house in the Otamatea Eco Village.

Learn how big to make your garden, where to place it, how to prepare the beds, how to grow good soil, how to make compost, how to grow the best seedlings and about pest and disease control and companion planting. A mix of theory and hands on.

In this workshop you will learn basic recipes—how to make nourishing and wholesome bread with or without starters like sourdough or yeast.
Sabine uses wheat and also different grains like spelt, rye, rice, corn and more.
